About this strain

The sheathed woodtuft is one of the tastiest mushrooms growing on wood. It forms dense clusters with honey-brown caps 3–6 cm across that lighten from the centre as they dry — hence the two-tone look and the Latin name mutabilis, “changeable”. Below the ring the stem is covered with small scales. It has a delicate, spicy aroma and is excellent in soups and sauces; the caps are eaten, as the stems are tough.

It can be grown indoors on sterilised sawdust blocks or on hardwood stumps and logs inoculated with plugs — on wood it fruits from spring to late autumn, often for several years. Caution: it is easily confused with the deadly poisonous funeral bell (Galerina marginata), which can even grow on the same wood — only pick mushrooms you can identify with certainty.

A cool-season fruiter, like autumn species. On logs the first mushrooms appear after approx. 6–12 months, followed by several flushes a season — from spring to late autumn — for several years.
