About this strain
Honey fungus is one of the best-loved wild mushrooms in Poland. It forms large clusters of honey-yellow to brown caps 3–10 cm across, with fine dark scales and a white ring on the stem. It has a pronounced flavour; young caps are excellent pickled and in soups and sauces. It is poisonous raw — before cooking, boil it for about 15–20 minutes and discard the water.
It grows more slowly than other wood-decay mushrooms and does best on dead hardwood stumps and logs inoculated with plugs; it fruits in autumn. Caution: honey fungus is a tree parasite and can spread to living trees and shrubs, especially fruit trees — place inoculated wood well away from gardens and orchards. Only pick mushrooms you can identify with certainty.
