About this strain

A warmth-loving relative of the button mushroom with a unique, sweetish almond aroma, strongest while cooking. It forms large, meaty mushrooms — caps reach 7–25 cm across and are covered with brownish, fibrous scales, while the stems are thick and white. It tastes distinctly of almonds and nuts, and drying makes the aroma even stronger.

It is grown like the button mushroom — on mushroom compost under a casing layer — but needs high temperatures throughout the cycle, approx. 24–27°C. It therefore does best in a heated room, and in summer also in a polytunnel or greenhouse.

    Once the compost is colonised, apply 4–5 cm of casing; pins appear when the mycelium grows through the casing.

Pick while the caps are still convex, before the veil over the gills breaks — after that they open and darken quickly. Between flushes raise humidity to approx. 90%. Yield: approx. 10 kg per m² of growing area. The mushrooms dry well, and drying intensifies the almond aroma.
