About this strain
A snow-white shimeji variety that won the world over thanks to Japanese bottle farms. It forms compact clusters of small, smooth caps on firm stems; they are usually picked at about 2 cm across, before they open, although mature caps reach 7–9 cm. Raw they are slightly bitter, but once sautéed they turn nutty, slightly sweet and pleasantly crunchy. They keep well.
It takes patience: after the spawn run the substrate has to mature for several weeks before pins appear. It does best indoors, in blocks or bottles of sterilised sawdust; it can also be plugged into hardwood logs.

Keep the substrate very moist between flushes. Harvest whole clusters before the caps open. Yield: approx. 18–20% of fresh substrate weight.
