About this strain
The classic brown shimeji, with caps showing a distinctive marbled pattern. It grows in compact clusters of firm, nutty mushrooms that turn slightly crunchy when sautéed — a popular ingredient in Japanese cooking: soups, stir-fries and tempura. It keeps well.
It gives the best yields when the substrate is allowed to mature and brown slightly after the spawn run, before pinning. It is grown indoors, in blocks or bottles of sterilised sawdust, as well as on hardwood logs inoculated with plugs.
